Jim Craig, PE

Jim Craig graduated from Vanderbilt University with a Bachelor of Science in Civil Engineering. Following his military service, he joined Coronado Builders, where he gained invaluable experience in both the design and construction aspects of the industry. As head of the design department, Jim not only oversaw design projects but also visited sites to witness the progress firsthand. This hands-on approach provided him with a comprehensive education, laying the foundation for his future endeavors. Jim remained at Coronado until he obtained his professional license in 1978.

In May 1978, Jim founded D and E in the spare bedroom of his home. For the first few years, he operated from this modest space, gradually building a client base before moving the company into its first office on West End in the mid-80s. Initially, D and E offered only civil and structural engineering services and focused on designing shopping centers.

However, during the economic downturn of the late 80s, Jim observed that while shopping centers struggled, restaurants were thriving. This insight led D and E to pivot its focus to restaurant design. The architectural component was added in the early 90s, expanding the firm’s capabilities. A pivotal moment came when Dan Evans, the founder of Cracker Barrel, told Jim, “You take care of Cracker Barrel, and I’ll take care of you.”

Since then, D and E has diversified its portfolio, branching out into various types of restaurants and projects. Today, the firm has evolved into a full-service design firm with a national presence. In 2021, after 43 years of leadership, Jim Craig transitioned to the role of Founder, continuing to support D and E in many ways daily.
